Fancy & Unique but Easy Meals

Here are some of our favorite "Special" dishes. Since they are recipes in our cookbook they are still on the easier side to make. Hymans® Salmon or Shrimp, Grits and Gravy

  • If you've never had this, you must try it just once! ITS DELICIOUS! YUM!!!!!


  •  2 (4-6 oz) salmon fillets or 10-12 shrimp
  • 1 cups of grits
  • 3 cups of chicken broth
  • 1 (18 oz) jar or 2 (.87 oz) packets of brown gravy
  • 1/4 cup butter
  • 1 tsp. garlic powder


  1. Bring broth to a boil in a medium sauce-pan over high heat. Stir in grits; reduce heat to low. Cover and cook for 7 minutes, stirring occasionally.
  2. While grits are cooking, Place brown gravy into another saucepan and bring to a boil, reduce heat to medium-low, and simmer until thickened, about 1-2 minutes.
  3. Place butter and garlic powder in 10 inch skillet and melt over medium high heat. Add shrimp and salmon, and cook until the shrimp are opaque, and the salmon is cooked through and flakes easily with a fork.
  4. Serve by placing grits in bowl or on a plate, then lay salmon or shrimp (Whichever dining party chooses) on top of grits and cover everything with gravy!

Loaded Chicken Pot Pie

  • Using premade pie crust, canned gravy, and a store-bought rotisserie chicken cuts a lot of steps from this comforting chicken pot pie. Definitely my favorite recipe of all time!


  • 1 1/2 cups of Canned Delmonte Sliced Carrots
  • 1/4 cup of Canned Delmonte Peas
  • 3 1/2 cups of potatoes, cubed and peeled (about 2 regular sized potatoes) or use 1  large can of Delmonte whole potatoes and cut them into pieces.
  • 2 (14.5 oz) cans of of chicken gravy
  • 1 package of 2 refrigerated ready-to-use pie crusts (such as Pillsbury®)
  • 1 Rotisserie chicken (about 3 cups of shredded chicken, no skin)
  • 1/4 cup butter
  • 1 egg
  • 1/4 cup milk


  1. Preheat oven to 425 degrees F. Place a baking sheet on the a rack on which you'll bake the pie. Occasionally gravy will bubble out and this way there will be less of a mess to clean up.
  2. Place peeled and quartered potatoes in a pot of water. Bring water to a boil and cook until the potatoes are tender. Drain Potatoes and cube to desired size then add carrots and peas and set aside. Or you can use canned Delmonte potatoes and skip this step.
  3. Remove 3 cups of meat from the rotisserie chicken, shred and set aside.
  4. Press one of the pie crusts into the bottom of a 9.5-inch pie dish. (You will need to stretch crust slightly to get it to cover edge of pie pan.) Spoon a layer of gravy (about 1/3 cup) covering the bottom of the crust.
  5. Layer the cooked vegetables and shredded chicken into the crust until the filling is level or slightly above the top of the dish. Pour the rest of the gravy slowly over the filling until gravy is visible at the top.You may have to move things around for the gravy to seep in : )
  6. Scatter butter pieces over the filling; top with second crust. Seal the 2 crusts together and crimp with a fork.
  7. Whisk the egg and milk together in a bowl, and brush over the top crust. Pierce the top crust several times to vent steam.
  8. Cover the edges of the pot pie with aluminum foil to prevent burning. Don't cover the whole pot pie just the edges. 
  9. Bake the pot pie in the preheated oven until the filling is bubbling and the crust is golden brown, about 45-55 minutes.

Dixie Stampede Cream of Vegetable Soup

  • This Recipe is from Dolly Parton's new cookbook Dolly's Dixie Fixin's. 


  • 3 tablespoons margarine
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon corn syrup
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon salt
  • 1/2 cup chicken broth
  • 1 1/2 cups water
  • 3/4 cup finely chopped cooked vegetable (I use diced canned potatoes and canned carrot slices diced very small)
  • 1 pint half-and-half cream (I always use heavy cream it tastes so much better)


  1. In a 3-quart sauce pot, melt margarine. Add onion, garlic, and corn syrup. Simmer 1 minute. Do NOT brown.
  2. Add flour, white pepper, salt, chicken broth, water, and vegetables. Simmer 3 minutes.
  3. Add half-and-half. Simmer until desired consistency. Stir constantly - do NOT bring to boil.

Pork Chops and Cheesy Au gratin Potatoes

  • Delicious pork chops with Velveeta cheese & sliced potatoes


  • 4 Potatoes (peeled and sliced)
  • 1/2 lb of Velveeta cheese (or enough to thoroughly cover potatoes)
  • 1/2 cup of milk
  • 2 Tbs of butter
  • 2 pork chops
  • 1 Tbsp of olive oil
  • 1/2 tsp garlic salt
  • 1/2 tsp of garlic pepper


  1. Wash, peel and slice all 4 potatoes. Then place a layer of potatoes on bottom of pan, then add milk and butter to dish. Add a layer of sliced velveeta cheese, then potaotes, then velveeta etc. until used all potatoes. End with a layer of velveeta.
  2. Place 2 pork chops (about 3/4 inch thick) on top of cheesy potatoes in baking dish. Brush pork chops with 1 tbsp of olive oil; sprinkle 1/2 tsp of garlic salt and 1/2 tsp of garlic pepper on pork chops.
  3. Bake pototoes and pork chops about 30-40 min or until pork is thoroughly cooked and potatoes are tender and cheese is browned. 

    Taco Salad with Doritos

    • This is a simple taco salad recipe but kids love it and it's just good!


    • 1 McCormick Taco Seasoning Packet
    • 3/4 cup of water
    • 1 lb of lean ground beef, turkey or chicken
    • 1 Head of Iceburg Lettuce
    • 2 Large Tomatoes
    • 4 cups of sharp cheddar cheese
    • 1 Large Bag of Doritos
    • 16 oz container of Sour Cream
    • 1 Jar of your choice of Salsa


    1. Finely chop head of lettuce, tomatoes and crush bag of Doritos. Then set aside.
    2. Cook meat in large skillet on medium-high heat. Drain grease if needed.
    3. Stir in one packet of McCormick Taco Seasoning and add water recommended on seasoning packet. Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally.
    4. Layer plate with Lettuce, meat, cheese, crushed Doritos and tomatoes. Add Sour Cream or Salsa for a finished touch, then enjoy!
