Quick but Delicious Family Meals

Here are some of our favorite quick family meals! For days when I might not be up to being mother of the year, Martha Stewart and Betty Crocker : )

Slow Cooker Meals for the Busy Family


Cheese-It Fried Chicken
  • "Don't be grossed out by the mayo. You won't be able to taste it after it is done cooking"

Ingredients
  • 3 cups of Cheese-Its
  • 1/3 of a cup of mayonnaise
  • 1 pound of boneless chicken breasts (without skin)
  • 1/2 tsp black pepper

Directions

  1. Crush cheese-its and stir in pepper.
  2. Coat Each piece of chicken with mayonnaise then cover completely with cheese-its
  3. Bake at 350° F about 1 hour or until chicken is tender, no longer pink and juices run clear. For food safety, internal temperature of the chicken should reach at least 165ºF. Do not cover pan or turn chicken while baking. Serve hot.

Chicken Spaghetti Bake

  • "Easy, Cheesy Goodness!"

Ingredients

  • 3-4 (5 oz) cans of chicken or 3-5 boneless chicken breasts
  • 1 (16 ounce) jar spaghetti sauce(I rarely use the whole jar)
  • 1 pound spaghetti (I like to use angel hair spaghetti pasta)
  • 4 cups of shredded Mozzarella Cheese

Directions

  1. Preheat oven to 350 degrees and mix spaghetti sauce with drained chicken in 9x13 pan.
  2. Meanwhile, bring a large pot of lightly salted & buttered water to a boil. Mix in pasta and cook for 8 to 10 minutes or until ready then drain.
  3. Mix together spaghetti noodles and sauce mixture in the 9x13 pan. Top with cheese and bake for 30 minutes, or until heated through and cheese is beginning to brown. If needed put on Broil for 2-4 minutes to brown cheese slightly.
If you use fresh boneless chicken breasts. Cube chicken then cook in skillet with olive oil & butter until thoroughly cooked then add sauce and continue with recipe the same.

Velveeta® Tuna Noodle Casserole

  • "This is a recipe from my mother in law and one of my husbands favorites!"

Ingredients

  • 1 (12 oz) box of Velveeta® Shells & Cheese
  • 2 (5 oz) cans of tuna
  • 1 roll of Ritz® Crackers

Directions

  1. Boil 6 cups of water. Stir in Shell Pasta. Cook 8-10 min., stirring occasionally. Don't overcook pasta. Drain pasta and return it to pan.
  2. Add the cheese sauce that came with the box of shell pasta and stir, then drain tuna and add both cans and stir until mixed well.
  3. Return pan to burner and cook for 2-3 more minutes then place in serving dish and add crushed crackers to the top.

Creamy Tuna Noodle Casserole
  • "This recipe came from Grandma and it is so easy and delicious! You can also add any vegetables to this mix if you want also! Peas or green beans are nice addition!"

Ingredients

  • 4 (10.75 oz) cans of Cambell's cream of chicken soup***
  • 1 (16 oz) bag of medium egg noodles
  • 1 (12 oz) or 2-3 (5 oz) cans of tuna fish
  • 1 roll of Ritz Crackers
  • 1/2 Tbsp Onion Powder
***Use 3 (14.75 oz) cans or 4 (10.75 oz) or use a little less then 2 (26 oz) cans of cream of chicken. Whichever ends up cheaper for you.

Directions
  1. Bring a pot of water to a rapid boil, add noodles and return to rapid boil. Cook noodles for 5 to 7 minutes or until done then drain water.
  2. Add cream of chicken, tuna fish & onion powder then cook until Hot. Serve with crushed ritz crackers on top and Enjoy!
    Easy Baked Parmesan Tilapia
    • I have a simple, quick dinner for you! And it includes two of my favorite food groups: butter and cheese."

    Ingredients

  • 4 tilapia filets
  • 3 tablespoons butter, at room temperature
  • 1/4 cup shredded Parmesan cheese
  • 1/2 tsp minced garlic or 1/8 tsp garlic powder

    Directions

  1. Preheat oven to 400 degrees.
  2. Pat tilapia dry (if frozen, it should be thawed first) with a paper towel and season with salt and pepper. Lay on a baking sheet sprayed with non-stick spray and bake for 10-12 minutes.
  3. While fish is baking, mix butter with garlic and Parmesan cheese.
  4. Remove fish from oven and gently flip. Spread about 1 tablespoon of butter mixture on the fish, and heat the broiler in your oven. Set fish under the broiler for about 2-3 minutes, or until cheese gets golden and bubbly.

    Mexican Chicken

    • "You can use Boneless Chicken Breasts or Canned Chicken in this Recipe."

    Ingredients

    • 4-5 Boneless Chicken Breasts or 2 (5 oz) cans of chicken
    • 1 can of Rotels diced tomatoes
    • 1/2 lb Monterrey Jack cheese, shredded
    • 1/2 lb of cheddar cheese, shredded
    • 1 large pkg Doritos, crushed
    • 1 (10 oz) can of cream of chicken soup

    Directions

    1. Preheat oven to 400 degrees F then bake chicken for 30 min. Cool. Cut into bite size pieces. - If using canned chicken skip this step.
    2. Mix all ingredients in glass casserole dish while leaving enough Doritos to cover the top of the casserole with a crunchy layer of goodness. Bake at 325 F until cheese bubbles. (about 35-45 minutes)
